Togolese Salad

A simple and traditional Togolese meal


  • 2 tomatoes, diced
  • 1 medium red onion, sliced
  • 1 can of sardines, chopped
  • 1 tablespoon white vinegar
  • 1/2 cup olive oil
  • salt and pepper to taste
  • 1 tablespoon chopped parsley
  • 1/2 cup mayonnaise
  • 16 ounces thin spaghetti, cooked and chilled
  • 1-2 hard-boiled eggs, sliced
  • 1 head Romaine lettuce, chopped


  1. Mix all vegetables in a bowl
  2. Add spaghetti and mix
  3. Prepare dressing: mix sardines (with oil), vinegar, oil, parsley, pepper, and salt
  4. Pour dressing over salad
  5. Add mayonnaise and mix
  6. Place salad on bed of chopped lettuce
  7. Top with sliced eggs
