Togolese Salad
A simple and traditional Togolese meal
Ingredients
- 2 tomatoes, diced
- 1 medium red onion, sliced
- 1 can of sardines, chopped
- 1 tablespoon white vinegar
- 1/2 cup olive oil
- salt and pepper to taste
- 1 tablespoon chopped parsley
- 1/2 cup mayonnaise
- 16 ounces thin spaghetti, cooked and chilled
- 1-2 hard-boiled eggs, sliced
- 1 head Romaine lettuce, chopped
Directions
- Mix all vegetables in a bowl
- Add spaghetti and mix
- Prepare dressing: mix sardines (with oil), vinegar, oil, parsley, pepper, and salt
- Pour dressing over salad
- Add mayonnaise and mix
- Place salad on bed of chopped lettuce
- Top with sliced eggs
