Plantains with ginger, onion, and heat.
- 3 medium plantains (peeled and chopped into 1/2 inch pieces)
- 1 small onion (finely diced)
- 2 tablespoons fresh ginger (finely grated)
- 1 teaspoon salt
- 1 teaspoon spicy chili pepper or hot sauce of choice
- Mix all ingredients in a large bowl.
- Pan fry in batches until plantains are golden brown.
- Serve hot.
