A thick cornmeal porridge.


  • 3 cups corn meal
  • 3 1/2 cup water


  • Mix 1 1/2 cups water and 1 1/2 cups cornmeal together.
  • Bring remaining 2 cups water to a boil and add cornmeal and water mixture.
  • Let simmer for 10-15 minutes.
  • Add remaining cornmeal and cook for 5 minutes until pâté is thick.
  • Serve hot with hot sauce or other savory sauce of choice like Beninese Red Sauce.
