Dadar Jagung

Corn Fritters.

Ingredients

  • 10 ears sweet corn
  • 1 egg
  • 1/2 wheat flour
  • 6-8 cloves of garlic
  • 4-5 shallots
  • 2 kefir lime leaves (can substitute lime zest)
  • 1/2 teaspoon dried coriander seeds (if available)
  • 1 fresh Thai chili pepper (or spicy chili pepper of choice)
  • 12 teaspoon of salt
  • Water as necessary
  • Oil for deep-frying

Directions

  • Clean the corn cobs thoroughly, then cut the corn from the cob.
  • Either grind the corn with a mortar and pestle until is a soft paste, or put it in the blender.
  • If you're using a mortar and pestle, transfer the corn to a large bowl and add egg and flour.
  • Grind the garlic, shallots, kefir lime leaves, peppers, coriander seeds and salt together to form a paste (or put them in the blender with the corn, egg, flour, and about 4 tablespoons of water).
  • Mix together spices and corn batter until smooth (either in the bowl or the blender).
  • Add water a little at a time until the mixture is about the same consistency as pancake batter.
  • Heat 3-4 inches of frying oil in a wok over medium-high heat.
  • Using a small ladle or large spoon, drop batter into the oil so that the size of the fritters is a few inches in diameter.
  • If possible, drop the batter where the top of the oil meets the wok, so that the fritters don't end up even more oily.
  • Using a metal or wooden spatula, flip the fritters when the edges are crisp and golden brown (usually about 3-4 minutes).
  • Cook for an additional 2-3 minutes on the other side. Remove from oil, and place on a towel lined plate to drain some of the oil.
  • Cool in fridge before serving.


Bahan-Bahan

  • 1 kilo jagung manis
  • 1 telur ayam
  • 50 gram (sekitar 1/2 gelas) tepung terigu
  • 6-8 siung bawang putih
  • 4-5 bawang merah
  • 2 daun jeruk purut
  • 1/2 sendok kecil biji ketumbar/ketumbar bubuk
  • 1 atau lebih cabe merah segar
  • 1/2 sendok kecil garam (atua lehib)
  • 1/4 gelas air putih
  • Minyak goreng

Cara Membuat

  • Cuci jagung, dan kerat biji jagung dari tongkol jagung.
  • Isikan bijinya ke lumpang dan haluskan, atau isikan ke blender (pencampur) dan kasi telur, bawang putih, bawang merah, tepung terigu, daun jeruk purut, cabe, garam, biji ketumbar, dan air putih, dan campur semua sampai halus.
  • Jika memakai lumpang, pindahkan jagung ke mangkok, dan campur dengan telur dan tepung terigu.
  • Masukkan bawang putih dan merah, daun jeruk purut, cabe, ketumbar, dan garam ke lumpang, dan haluskan.
  • Kasi bumbu dan air putih ke campuran jagung, dan aduk sampai digabungkan.
  • Kalau masih terlalu kental, tambah air sedikit.
  • Isikan sekitar 6-8 senti minyak ke wajan, dan panaskan dengan api besar.
  • Dengan sendok besar atau pencedok, gayung adonan dan masukkan ke wajan.
  • Goreng sekitar 3-4 menit, kemudian, balikkan dan goreng 2-3 lagi.
  • Dengan sendok berlubang, ambil dadar jagung dan taruh di handuk bersih
  • untuk mengeringkan.
