Recipe: Pumpkin Soup

Materials & Procedures


  1. 3 c pumpkin
  2. 2 onions, diced
  3. 1 clove garlic crushed
  4. 5 ½ c water
  5. 1 c milk
  6. 3 chicken bouillon cubes
  7. pepper
  8. 2 T butter
  9. 1 medium kumala (sweet potato), diced
  10. ¼ tsp. nutmeg


  1. Place the pumpkin, water, pepper, and chicken bouillon in a saucepan.
  2. Bring to a boil, and simmer for 20 minutes or until the pumpkin is soft. Mash the pumpkin and set it aside.
  3. Melt the butter in a saucepan, add onions and potatoes, and cook until onion is golden.
  4. Add onions and potatoes to pumpkin mixture. Cover and cook gently for 15 minutes.
  5. Add milk and nutmeg and stir. Heat through but do not boil.
